Banana Raspberry Smoothie - Quirky CookingSmoothies are perfect for an energy boost at morning tea time – my blood sugar levels always seem to be dropping at this time of day, and a good smoothie really helps. Here’s one that we love to make… it’s delicious!

I start off most of my smoothies by grinding up raw almonds, pepitas, linseeds and dates – that makes the sweet milk they are based on. You can really add any frozen fruit, plus water, and some additional sweetener if needed. I usually add frozen banana to make it thick and creamy – (just peel them and freeze them whole in a plastic bag, and break them off as you need them). I also like to add tahini to make it creamier, and to add a calcium boost. (Of course, if you have a powerful machine like the Thermomix, you can grind up your own sesame seeds at the start if you’d rather, instead of adding tahini.)

Ingredients

2 hand fulls of raw almonds

1 hand full of raw pepitas

2 tsp linseeds (flaxseeds)

1 big hand full of pitted dates

34 frozen bananas

2 big hand fulls frozen raspberries

2 Tbsp tahini

1 Tbsp agave syrup

1 litre water

Instructions

1. Add almonds, pepitas and flaxseeds to your Thermomix and grind for 20 sec/ speed 9, or until finely ground.

2. Add dates and grind for another 10-20 sec /speed 9, until fine.

3. Add bananas, raspberries, tahini, agave and water, blend for 1 minute /speed 9.

4. Enjoy!

Notes

  • If you have time, soak almonds and seeds overnight, then drain off the water, add all other ingredients and blend 1 minute /speed 9.
  • You can swap agave syrup for maple syrup.

    This sounds great, I’ve been making my smoothies the regular way, with milk but I’m keen to try it this way. And I made the chocolate sorbet tonight, OMG, it was to die for!

    I will have to remember to cut my bananas in 1-inch chunks before I freeze them just so I can make one of these smoothies. It’s sometimes nice ot drink one’s breakfast 😉 and take a break from green smoothies, so this recipe looks great.

    Judy, I don’t generally measure, but maybe just cut this one in half, or a bit less – probably 1 banana would do. Just guess – it’s a very flexible recipe!! 🙂

    I’m definitely going to try making one of this. It seems like a pretty easy recipe. but I’m going to put a little more almonds than what was said in the recipe. I’m sure that would taste great!
