Fried Rice in the Thermomix

This is a very easy, quick and healthy way to make a big batch of fried rice. It easily feeds our family of six, with leftovers. The rice, veggies and egg are actually steamed – no oil is needed. You can use basmati rice and it will cook in about 20 minutes, or with brown rice it will cook in 35 minutes. And you don’t have to stand there stirring! Thanks to my friend Nancy for teaching me this method years ago with bacon and veggies – there’s lots of possible variations, so be creative and make up your own versions too. You can use as much meat and veggies as will fit in the Varoma – I’ve just given some suggestions, not definite amounts.

[Update for TM5!!] If you own a TM5, just make sure you add an extra 100g water to the bowl when you make this, as the bowl is bigger and needs that bit more water for the rice to cook through properly.]

Ingredients

1 onion, halved, or spring onions, quartered

1 clove organic garlic

4 eggs

400g coconut milk

500g water (for basmati rice) or 700g water (for brown rice)* (see note for TM5)

400g of raw basmati or brown rice (or less if you want a smaller batch)

100g – 200g of cubed chicken, fish, bacon, or some shelled prawns

2 carrots, sliced or julienned

12 stalks celery, sliced

And some of the following

broccoli/cauliflower florets

kohlrabi, peeled and thinly sliced

cabbage, shredded

spinach/silverbeet/bok choy, sliced

frozen peas & corn

cashews/slivered almonds/sesame seeds

fine sea salt & pepper to taste

Instructions

  1. Place onion or spring onions and garlic into Thermomix bowl and chop 4 sec/sp 5. Remove to Varoma dish.
  2. Place eggs into bowl and mix 5 sec/sp 3. Line Varoma tray with a large piece of wet baking paper (so that paper overlaps sides of tray approx. 2 cm) and pour eggs into tray. Set aside.
  3. Rinse bowl. Weigh coconut milk and water into bowl and place lid on top.
  4. Place rice basket on top of lid, and weigh the rice into the basket. Rinse well under running water, then insert basket into bowl.
  5. Place Varoma into position, and start cooking – 20 mins (basmati) or 35 mins (brown)/Varoma temp/sp 4.
  6. While rice begins cooking, chop up meat and/or veggies, placing it into the Varoma as you go, harder veggies and meat on the bottom, softer veggies and nut/seeds on top. (The steam will not begin cooking what’s in the Varoma until about 10 mins into cooking time, so you have time to get it all in the dish before then. Replace Varoma lid after each addition.)
  7. Check after 20 mins to see if everything is cooked. (With brown rice, just add the veggies and eggs when there’s only 15 minutes left to go, so they don’t overcook.)
  8. Remove Varoma and place lid underneath.  Remove rice basket using spatula, and tip rice into Varoma bowl.  Add the meat and veggies. Slice the egg up in tray (see photo below) and tip into Varoma bowl with rice.  Season with some tamari sauce / soy sauce / sweet chilli sauce, mix together gently, and serve!

Notes

  • Poke a hole through the meat and veggies in the Varoma, so that the steam can get through easily.
  • Don’t pack the Varoma too tightly or the meat and veggies may not cook well.
  • * If you own a TM5, add another 100g water, or rice may not cook through properly due to larger bowl size.

    Wonderful recipe!!! I didn’t remove egg immediately from paper so it stuck, which actually caused quite an issue.
    But other than that…:) super yummy!

    The first time, ever,I have cooked Fried Rice (as my gorgeous Mum makes a delicious one and I’ve never wanted to try as it could never replicate hers )! But…..Oh my, I so love this dish Jo, so much so that I’m even going to cook it for Mum ! I’d also not cooked eggs in the Varoma before,well I’m converted 🙂 Thank you !

    Jo, I’ve only had my tmx for two days, and I’ve just made this tonight. Kids didn’t like it but they don’t like dinner at the best of times! Hubby loved it (had seconds) and said he would be happy to take it to work to share with “the guys”, I think the veg was a little under done, as was the egg, but I’ll just make it smaller/put it on sooner next time. Thumbs up here 😀

    Am so excited as my TM was delivered yesterday, so today has been a cooking day!! I have spent the last week “fixed” to your site reading and salivating over your fantastic recipes.
    Our first meal cooked in the TM tonight is going to be the Butter Chicken EDC accompanied by your fried rice as it sounds delicious. I was however, reading your menu plans and read that you reheat the Fried Rice in the TM. Can you please let me know how you do this, as l am planning on making enough for a couple of meals (only cooking for Hubby & I) and have always found it difficult to reheat. Thanks SOOO much for your great site and all the info. I am looking forward to making so many things with my new TM. Also looking forward to getting your new Cookbook. Sue W

    I love this recipe, except the egg always gets stuck to the paper. Do you waxed BP or plain? I did try waxed first but found it didn’t cook the eggs. Any suggestions? TIA!

    Soooo sooooo good!!! Hubby and I both said it was the best fried rice we’d ever eaten! We had about half a cup of liquid left at the end which I poured over each dish! Omg!!! Such a good idea that was 🙂

    I’m making this tonight and I’m unsure what im doing wrong but I’ve been cooking the rice an hour and a half and it’s still not done. I followed the directions for brown rice with the extra time and liquid but it’s just not cooking! Any ideas? There is plenty of steam and my vegies were cooked fine.

    I made this last night for the first time, veggie’s only then added BBQ chicken that I had. Only thing is my egg was green & yellow, which was random, I didn’t add the egg but threw it out, it didn’t smell but the colour threw me, would broccoli discolour the egg or were they off? They were fresh backyard eggs from a friend. From a very unmotivated TM user (but I’m trying :))

      Hi Natalie- Im not sure. Mine aren’t usually bright orange colours either as when they steam the colour does fade to a lighter colour, but I wouldn’t say green and yellow either.. HMM.. A mystery? Maybe give it another go! 🙂

    What can I use instead of coconut milk? I’m not a fan of coconut milk – could I use normal milk or just add more water?

      I cringe everytime i make fried rice but making it in my thermie made it sooo simple and this recipe was absolutely amazing. I made it with brown rice as hubby prefers and i made it for his work lunches. I literally had to try stop myself from eating it all.
      My egg did go a little rubbery so next time ill make sure its not in for longer.

    I’ve just stumbled across this recipe and after reading the reviews I’m giving it a go tonight!! I have only minced chicken, would I still put into the varoma and reduce the cooking time?

      Hi Amy! 🙂 Yes, you can put the minced chicken into the Varoma and you will still need to cook the recipe for the same amount of time. Enjoy! xx

    Rice doesn’t cook …help! veggies were ok but I overcooked them which i will not do next time around. Main issue is that I couldn’t get black rice to cook in the Thermomix, any suggestions?

      If cooking with black rice, make sure you soak for 12 to 24 hours prior to cooking;-). Otherwise it will take forever!!!

    Can you freeze this? We are going camping after Christmas thought I might make a batch up to freeze so we can have when camping, do you think it would be ok?

      Hi. So sorry to hear that. This recipe was developed for TM31 model so please add another 100g of water if using TM5 or TM6 and make sure you rinse your rice really well so it’s wet:-). Hope this helps.

    I have been making this recipe for years and love it, now that the kids have either left or aren’t home most nights, its a lot for just 2 people. If I want to be able to make only half the amount, what would be the suggested cooking times please?

      Hi Michelle, I would suggest just checking whether rice and everything else is cooked along the way. Rice usually needs to cook for 20 mins hence even if cooking less, you would roughly be looking at similar cooking time:-). So happy your kids love the recipe. Yay:-)!
