{Coconut Raspberry Jellies} I’ve had a few peopl

{Coconut Raspberry Jellies} I’ve had a few people ask for this recipe from Simple, Healing Food, so here you go - a gut-healthy weekend treat!

In the jellies in this photo I used homemade coconut cream and it separated a little (which I thought looked kind of cool 😄). And by the way, that’s vanilla powder not pepper in the jelly in case you were worried that my pepper addiction had gone too far... 😁😁 Sweeten them to taste and you can use maple syrup rather than honey if you prefer.

❤️ Coconut Raspberry Jellies ❤️

Coconut jelly:
250ml coconut cream
1 ½ Tbsp gelatine
50g honey
⅛ tsp vanilla powder or ¼ tsp vanilla extract

Raspberry jelly:
250g frozen raspberries
40g honey
1 ½ Tbsp gelatine

Method

1. Prepare moulds for jellies by placing them on a baking tray. Or line a small (26x19cm) rectangular dish with baking paper and set aside.

2. Coconut jelly: Place the coconut cream, gelatine, honey and vanilla in a heavy-based saucepan and warm, stirring, over medium heat until bubbles form on the edges. Remove from heat and pour into moulds or dish, filling half full. Place the tray or dish carefully into the freezer (making sure to keep level). Chill for at least 30 minutes or until firm before adding the next layer.

3. Raspberry jelly: Place raspberries, honey and gelatine into a heavy-based saucepan and heat over medium heat, stirring, until it begins to simmer. Reduce heat to low and keep stirring until raspberries have broken up, about 10 minutes. Strain jelly through a fine metal sieve into a bowl and allow to cool until room temp but not cool enough to set.

4. Pour raspberry jelly carefully over the coconut jelly to the top of the moulds or dish. Place back into the freezer to set for at least 30 minutes or until firm.

5. Pop jellies out of moulds into containers. Or if jelly is in a dish, slice into 2cm cubes and place into containers.

✨ Beef & cabbage soup with pumpkin & cauliflower mash (SHF) There’s a similar recipe for the Thermomix in my first cookbook, Quirky Cooking) 😍

✨ Gypsy stew (LCF) Use rainbow chard in this one for a beautifully colourful result!

✨ Beef & vegetable stir fry (SHF) The recipe in SHF is a GAPS version - the beef is simmered in stock first until tender - or you can do a traditional version with the beef seared in a very hot wok. (The reason for simmering in stock on GAPS is to make it easy to digest for a sensitive gut.)

✨ Roast chicken with herbs (Best ever roast chicken from SHF) This is chicken that has been used to make a short-cooked stock, then roasted in the oven on high heat to crisp the skin - deliciously tender!

✨ Joye’s potato bake (blog - link in bio for blog or search ‘quirky cooking potato bake’) Comfort food!! Layers of sweet potato & English potato baked in a creamy, lemony sauce.

✨ Roast beef & veg - I don’t have a recipe written down for this, I just cook the roast in a covered roaster with a little water, carrots, pumpkin, herbs, salt & pepper on 160C for about 3-4 hours depending on size of roast. Serve hot or cold, sliced thinly.

✨ Lamb Massaman curry (SHF) Use the Beef Massaman curry in SHF but swap beef for lamb. Yum!!

✨ Meatloaf & roast veg (SHF) We had visitors for dinner the other night and served this meatloaf with roast pumpkin and carrots, roast potatoes (topped with butter, sour cream and grated cheese) and broccoli, then roasted plums & berries with lemon yoghurt cupcakes for dessert. 😍 (Also added pate to the meatloaf for extra goodness.) An easy and yummy meal to pop in the oven when you have a few mouths to feed and don’t want to spend all day in the kitchen!! 🤗

{Q&A with @elysenutritionist } I am gaining weight...what am I doing wrong?

“If you feel like you’re eating well, moving your body, doing all the right things but the weight is either creeping on or not shifting, then there can be a few underlying factors.

1. Liver health - I see this very commonly in woman. If your liver is not detoxing properly, then hormones can be out of whack, toxins will build up, and weight will pile around the middle.

2. Not eating enough and/or not eating in the morning - most women I work with are not getting enough protein, especially in the mornings. Make breakfast more like dinner!

3. Stress - of course I have to mention this one! Stress can be challenging to avoid, but if you are rushing around all the time in fight or flight, you are telling your body to store.

4. Leptin resistance - have your leptin levels tested, if they are high and/or your reverse T3 is high, then you are likely leptin resistant and need to resolve this to lose weight (we will help with this in The Gut Health Formula for those that need it!)”

“Parasites would be so simple if it was a matter of ‘kill them then they won’t be a problem anymore’. This is just absolutely not the case. Parasites are a response to an environment that is toxic and needs cleaning up. Parasites are invited into the body because there are toxins and inflammation, they ‘eat’ this to help the body clean this up.

Unfortunately, parasites do come with their own symptoms as well. If we just try to kill them, they will release all of the toxins back in to the system, and often make people more sick. We will not have changed anything about the toxic environment but rather just made it worse, and the parasites will return as the body will keep inviting them in.

To truly deal with parasites, we need to focus on actually cleaning up the body, the reason they were invited in. When we do this in clinic, we see parasites coming out in our clients stools without even touching any herbs to address parasites. We just need to get to the root cause!”
